Story

Ms. Cheezious® co-founders Brian and Fatima Mullins and M. Christian Dickens rolled the first Ms. Cheezious® food truck on to the streets of Miami in December, 2010. And with it, they took Miami by storm with everyone’s favorite comfort food; grilled cheese sandwiches – only not quite as innocent as mom used to make!

Breaking the Cheese Mold

Brian and Christian each come to the cheese melting game with over 25 years of experience in the food and beverage industry.  Before opening, Brian worked with some corporate big-wig brands in the culinary industry and opened over 30 restaurants throughout North America, South America, Asia and Europe. As far as we’re concerned, however, Brian’s culinary heart started beating in a Long Island gastronomic powerhouse where inspiration wafted from the kitchen each time his mother and grandmother were near the stove. Developing a deep appreciation for food at an early age, Brian would spend days keeping a watchful eye on the techniques his grandmother would use when preparing family meals, then would take over the kitchen afterward to experiment on his own. He credits these moments, in addition to his strong culinary genes, as the catalyst for his career.  By age 15, Brian had developed into a self-taught chef and the front of house operations quickly became his next great passion.  Soon, he was traveling and opening restaurants across the map, while also absorbing the cocktails culture and experiencing the food in destinations including Hong Kong, London, Hawaii, Moscow, Indonesia and Mexico.

Big Cheese

M. Christian Dickens began his career at the Ritz-Carlton Hotel Company, a Five-Star and Five-Diamond Hotel located in New York. He was instrumental in the corporate development of the hotel brand and in helping the hotel company achieve its first ever “Malcolm Baldrige (MBNQA) award for Hotel Excellence” accolades. Christian demonstrates a proven track record of providing the highest levels of food and beverage executive management, personnel development and training, guest relations, venue/concept development and design, marketing/promotions, and hospitality management. This includes the opening of over 35 new restaurants for Planet Hollywood. Christian was also part of the development of several mega clubs in Las Vegas, Miami and the Lone Wolf Cigar concept in Dallas, Texas. We like to think of Christian as a Big Cheese within his industry, traveling around the world acquiring extensive knowledge of hotels, resorts, entertainment venues, and sports venues in destinations including Argentina, Buenos Aires, Bahamas, Bali, Dominican Republic, France, French Polynesia, Germany, Hong Kong, Indonesia, Japan, Macau, Mexico, Netherlands, Singapore, South America, and South Korea.

Say Queso

While Fatima was melting hearts in non-profit management for the last seven years, she discovered there are many ways to slice the caring cheese, particularly by delivering ooey-gooey delight to the community. To clarify – Fatima is not “Ms. Cheezious.” However, she very much is Ms. Cheezious. As social media director for the brand, Fatima manages the voice of the Ms. Cheezious® online presence. With tens of thousands of loyal followers across multiple platforms, the online community Ms. Cheezious® has developed is crucial to the brand, as the relationship is truly a mutually beneficial communication vehicle. Fatima has cultivated a fun and fruitful relationship with the online audience.

Getting the Cheese Rolling

It was during a wild jaunt to Vegas in September, 2010, some might claim under the fog of the reflecting sun and poolside “persuasion,” that it became clear to Brian, his wife Fatima and Christian that it was time to combine their creative cooking spirit and flair for business to create a restaurant concept of their own.  Staying true to the their culinary philosophy that life’s most prized moments are created around good food and good people, the trio delved into the think-tank and created a menu designed around the grilled cheese sandwich, satisfying everyone’s comfort cravings. The concept of the sexy maven, the iconic Ms. Cheezious® character, spreading her cheesy love to the masses was born. Using fresh ingredients and inspiration from their diverse palates, the team began adding new layers of flavor to the classic American favorite.

Everyone’s Favorite Cheese

Since Ms. Cheezious®’ launch, the brand has become one of Miami’s most popular food truck destinations, earning a great number of rave reviews, including South Beach Wine and Food Festival’s People’s Choice award for Best Food Truck two years in a row. Eager clientele seek out Ms. Cheezious® to experience its accessible menu and its attractive concept and design. The cheese keeps melting and the Ms. Cheezious® brand now includes two food trucks and two brick and mortar locations in the historic MIMO district of Miami, at 7418 Biscayne Boulevard and 1915 Ponce De Leon Blvd, Coral Gables, 33134.
